Pork Adobo (Filipino Braised Pork)
A classic Filipino dish where tender pork is braised in a savory and tangy mixture of soy sauce, vinegar, garlic, and spices. It's hearty, comforting, and perfect served over steamed white rice.

In a large bowl, combine the pork belly cubes with soy sauce and minced garlic. Massage the marinade into the meat and let it sit for at least 30 minutes to absorb the flavors.

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Sear the marinated pork on all sides until browned, working in batches if necessary to avoid overcrowding the pan.

Return all the pork to the pot. Add the remaining marinade, water, whole black peppercorns, and dried bay leaves. Bring the mixture to a boil.

Lower the heat to a simmer, cover the pot, and cook for about 40-50 minutes, or until the pork is tender.

Pour in the vinegar. Do not stir. Let it simmer uncovered for about 10 minutes to cook off the strong acid taste.

Stir the stew gently and continue to simmer for another 5-10 minutes until the sauce has reduced and slightly thickened. Taste and add sugar if you prefer a slightly sweeter balance.
