Salt and Pepper Shrimp
Crispy, fried shrimp tossed with aromatic garlic, ginger, spicy chilies, and a signature seasoning blend of salt and white pepper. A popular Chinese appetizer that's addictive and easy to make.

Clean the shrimp (keep shells on for crispiness if preferred, or peel/devein). Pat them very dry with paper towels.

In a bowl, toss the shrimp with cornstarch until lightly and evenly coated. Shake off excess starch.

Heat oil in a wok or deep skillet to 375°F (190°C). Fry the shrimp in batches for 2-3 minutes until golden and crispy. Remove and drain on paper towels.

Remove all but 1 tablespoon of oil from the wok. Add minced garlic, ginger, sliced chilies, and green onions. Stir-fry for 30-60 seconds until fragrant.

Return the fried shrimp to the wok. Sprinkle the salt and pepper mixture (and Sichuan pepper if using) over the shrimp.

Toss everything quickly for another 30 seconds to coat the shrimp in the seasonings.
