    Place the pork ribs in a large pot and cover with water. Bring to a boil, then skim off any scum that rises to the surface.

    Add the quartered onion and chopped tomatoes to the pot. Lower the heat to a simmer, cover, and cook for 60 minutes or until the pork is fork-tender.

    Add the sliced daikon radish and taro (gabi) if using. Cook for another 5-8 minutes until slightly softened.

    Stir in the tamarind paste (or soup mix) and fish sauce. Adjust the sourness and saltiness to your taste.

    Add the green chilies and eggplant slices. Simmer for 3-4 minutes.
