A beloved dry Indian curry featuring potatoes (Aloo) and cauliflower (Gobi) stir-fried with turmeric, ginger, and aromatic spices.

Heat oil in a large pan or wok over medium heat. Add cumin seeds.

Add chopped onions and sauté until translucent. Add ginger and cook for another minute.

Add potatoes and cauliflower florets. Stir well to coat with oil and onions.

Add turmeric, red chili powder, and salt. Mix well. Cover and cook on low heat for 10-15 minutes, stirring occasionally to prevent sticking.

Add chopped tomatoes. Cook uncovered for another 5-10 minutes until vegetables are tender and tomatoes are cooked down.

Sprinkle garam masala and garnish with fresh cilantro. Serve hot.
