    In a bowl, mix chicken cubes with yogurt, ginger-garlic paste, chili powder, turmeric, and salt.

    Add cornstarch, rice flour, and egg white. Mix well to coat the chicken pieces.

    Heat oil in a deep pan. Fry chicken pieces in batches until crispy and fully cooked (about 6-8 minutes). Drain on paper towels.

    In a separate pan, heat 1 tbsp oil. excessive oil.

    Add slit green chilies and curry leaves. Fry until crisp.

    Toss the fried chicken in this tempering mixture quickly.
