Japchae with Beef
Savory and sweet Korean stir-fried glass noodles (dangmyeon) with colorful vegetables and tender strips of seasoned beef.

In a small bowl, mix soy sauce, sugar, sesame oil, and minced garlic to make the sauce.

Season the beef strips with 1 tbsp of the sauce. Set aside.

Boil water in a pot. Blanch the spinach for 30 seconds, drain immediately, rinse with cold water, and squeeze out excess moisture. Season with a pinch of salt and a drop of sesame oil.

In the same boiling water, cook the noodles for 6-7 minutes until soft and chewy. Drain and rinse under cold water. Cut noodles with scissors into shorter lengths.

Heat a skillet over medium heat. Sauté the marinated beef until cooked through. Remove from pan.

In the same pan, sauté onions, carrots, and mushrooms lightly with a little oil until tender-crisp (about 2-3 minutes).

Add the noodles, beef, and spinach to the pan. Pour the remaining sauce over everything.

Stir fry for 1-2 minutes until everything is well combined and heated through. Sprinkle with sesame seeds and serve.
