A famous South Indian breakfast dish. Crispy, fermented rice and lentil crepe stuffed with a savory spiced potato filling.

Filling: Heat oil in a pan. Splutter mustard seeds and curry leaves. Add onions and green chilies. Sauté until translucent.

Add turmeric, salt, and boiled potatoes. Mash and mix well. Cook for 2-3 minutes. Remove from heat.

Dosa: Heat a tawa (griddle). Pour a ladleful of batter and spread it into a thin circle. Drizzle some oil around edges.

Cook until the base is golden brown and crispy.

Place a portion of potato filling on one side. Garnish with onions if desired.

Fold over and serve hot with coconut chutney and sambar.
