    In a small bowl, whisk together lemon juice, olive oil, dried oregano, garlic, salt, and pepper.

    Place chicken thighs in a baking dish. Pour the marinade over the chicken, ensuring they are well coated (under the skin too).

    Scatter cherry tomatoes and Kalamata olives around the chicken.

    Roast in the preheated oven for 35-40 minutes, or until the skin is crispy and the chicken is fully cooked (165°F/74°C internal temp).
