    Heat oil, sauté onion and garlic.

    Add paprika and flour, cook 1 min.

    Whisk in broth and tomato paste.

    Simmer 10 mins.

    Blend.

    Fried potatoes twice: first at 325°F (163°C) (160°C) until tender, then at 375°F (191°C) (190°C) until crispy.
