Tender skewers of marinated beef grilled to perfection and served with a rich, creamy, and slightly spicy peanut dipping sauce. A favorite Southeast Asian appetizer or main dish.

    Soak bamboo skewers in water for 30 minutes to prevent burning.

    Mix lemongrass, garlic, shallot, turmeric, ground coriander, brown sugar, and soy sauce in a blender or bowl to make the marinade.

    Toss the beef strips with the marinade. Cover and refrigerate for at least 1 hour, or overnight.

    Thread the marinated beef onto the skewers.

    Make the peanut sauce: Sauté curry paste (or aromatics) in a little oil. Add peanut butter, coconut milk, soy sauce, lime juice, and sugar. Simmer until smooth and thickened.

    Grill the beef skewers over medium-high heat for 2-3 minutes per side until charred and cooked through.

    Serve the hot skewers with the warm peanut sauce, cucumber slices, and red onions.
