Sweet and savory Japanese rolled omelette typically served for breakfast or in bento boxes.

    Whisk eggs, dashi, sugar, and soy sauce in a bowl gently (try not to create too many bubbles).

    Heat a square tamagoyaki pan over medium heat. Lightly oil the pan.

    Pour a thin layer of egg mixture. When slightly set, roll it toward you. Push roll to far end.

    Oil the empty part of pan again. Pour another thin layer, making sure it goes under the cooked roll.

    Roll again. Repeat until all egg mixture is used.

    Shape with a bamboo mat if desired, then slice into rounds or rectangles.
