Fast and flavorful Japanese-style fried rice with ham, eggs, and green onions, seasoned with soy sauce. A perfect way to use leftover rice.

    Dice the ham into small squares and chop the green onions. Beat the eggs in a small bowl. If using, mix the mayonnaise into the beaten eggs (it makes the rice non-sticky).

    Heat vegetable oil in a wok or large skillet over high heat.

    Pour the egg mixture into the hot pan. Immediately add the cooked rice on top of the eggs.

    Stir-fry vigorously, breaking up any rice clumps and coating each grain with the egg, for about 2-3 minutes.

    Add the diced ham and green onions. Continue to stir-fry for another 2 minutes.

    Drizzle the soy sauce around the edge of the pan (to sizzle it). Toss everything to combine.

    Season with salt and pepper to taste. Serve hot.
