Chicken Quesadillas containing Cheese

In a medium bowl, combine the shredded chicken, cheddar cheese, and Monterey Jack cheese.

Heat a large non-stick skillet over medium heat (about 350°F / 175°C).

Brush a small amount of olive oil onto one side of a flour tortilla and place it, oil-side down, into the skillet.

Sprinkle a portion of the chicken and cheese mixture over one half of the tortilla.

Fold the other half of the tortilla over the filling to create a half-moon shape.

Cook for 2-3 minutes until the bottom is golden brown and crispy.

Carefully flip the quesadilla and cook for another 2-3 minutes on the other side until golden and the cheese is completely melted.
