Creamy chicken enchiladas topped with a zesty tomatillo sauce and melted cheese (Suizas style).

Boil the tomatillos and garlic in water for 10 minutes until soft. Drain.

Blend the cooked tomatillos and garlic with the sour cream until smooth.

Preheat the oven to 375°F (190°C).

Pour a little of the sauce into the bottom of a baking dish.

Lightly fry the corn tortillas in oil to soften them, or warm them in a microwave.

Fill each tortilla with shredded chicken, roll it up, and place it seam-side down in the baking dish.

Pour the remaining sauce over the enchiladas and top generously with shredded Monterey Jack cheese.

Bake for 20 minutes until the cheese is melted and bubbly.
