Classic Tortilla Soup with a tomato-based broth, crispy fried tortilla strips, avocado, cheese, and sour cream.

    In a blender, combine the tomatoes, onion, and garlic. Blend until smooth.

    In a large pot, heat a little oil and fry the tomato puree for 5 minutes until it darkens and thickens.

    Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.

    While the soup simmers, heat oil in a pan and fry the corn tortilla strips until crisp and golden. Drain on paper towels.

    To serve, ladle the hot soup into bowls.
