Sugar Cookies with Royal Icing

Classic rolled sugar cookies decorated with smooth, hardening royal icing.

Cream butter and sugar until smooth. Beat in egg and vanilla.

Combine flour and baking powder; mix into the creamed mixture. Chill dough for 1 hour.

Preheat oven to 400°F (200°C). Roll out dough on floured surface to 1/4 to 1/2 inch thick.

Cut into shapes with cookie cutters. Place on ungreased cookie sheets.

Bake 6 to 8 minutes (400°F / 200°C). Cool completely.

For icing: beat powdered sugar, meringue powder, and 5 tbsp water until stiff peaks form. Add more water if needed for consistency. Decorate cookies.
