A quintessential Levantine salad with crunchy toasted pita chips, mixed greens, radishes, and sumac-lemon dressing.

    Preheat oven to 375°F (190°C). Toss torn pita bread with 1 tablespoon olive oil on a baking sheet.

    Bake pita chips for 10-12 minutes until golden and crisp. Let cool.

    In a large salad bowl, combine romaine lettuce, cucumbers, tomatoes, radishes, green onions, and mint.

    In a small jar, whisk together the lemon juice, remaining olive oil, sumac, and a pinch of salt.

    Just before serving, add the toasted pita chips to the salad.

    Pour dressing over the salad and toss well. The pita should stay slightly crunchy.
