    Beat egg whites and salt until foamy.

    Gradually enhance speed and add sugar, continuing to beat until stiff peaks form.

    Fold in vanilla extract.

    Pipe or drop onto prepared baking sheets.

    Bake for 45 to 60 minutes (250°F / 120°C) until surface is dry and they can be lifted from the paper.
