    Bring lamb to room temp. Preheat oven to 400°F (204°C).

    Make herb paste with garlic, rosemary, oil, lemon zest.

    Score fat, rub paste on lamb.

    Roast 15 mins at 400°F (204°C).

    Reduce heat to 325°F (163°C). Roast until 135°F (57°C) internal (approx 1 hr).

  6. 6

    Rest 20 mins before carving.
